Summer is upon us, and the 4th of July is right around the corner. These tarts are a refreshing and patriotic dessert to add to your celebrations. For a lower carb red fruit option, you can substitute the cherries for strawberries, which have about 7g less net carbs per cup. You can substitute the monk fruit sweetener for one of your choice, but be sure to reference a conversion chart. Entire batch = 65.07g net carbs
Separated into 6 tarts, each tart = 10.85g net carbs
Ingredients:
Crust:
- 1 large egg
- 1⅓ cup almond flour
- ¼ cup monk fruit sweetener
- 3 Tbsp. melted butter
- 1 tsp. cinnamon
- 1 tsp. imitation vanilla extract
Tart Filling:
- 10 cherries
- 8 oz. softened cream cheese
- ¾ cup heavy cream
- ¼ cup monk fruit sweetener
- 1 tsp. imitation vanilla extract
Topping:
- 6 cherries
- ½ cup blueberries
- ½ cup plain Greek yogurt
- 2 Tbsp. monk fruit sweetener
- 1 tsp. imitation vanilla extract
Directions:
Crust:
- Preheat oven to 350 degrees.
- In a mixing bowl, combine almond flour, monk fruit sweetener, and cinnamon. Mix well.
- Add egg, melted butter, and imitation vanilla extract to mixing bowl. Mix well.
- Spread evenly along bottom and sides of six 4-inch tart molds or pans.
- Bake until golden (about 15 minutes), and set aside.
Tart Filling:
- In a mixing bowl, combine cream cheese, heavy cream, monk fruit sweetener, and imitation vanilla extract. Mix well with a hand mixer on high speed for about 10 minutes.
- De-stem and de-pit 20 cherries. Process in a blender or food processor for about 1 minute. Add into cream mixture.
- Spread filling evenly on top of each crust.
- Refrigerate while preparing the topping.
Topping:
- In a small bowl, combine yogurt, monk fruit sweetener, and imitation vanilla extract. Mix well.
- Remove the tarts from the refrigerator, and place a dollop of topping onto each tart.
- Place 1 cherry in the middle of each tart and place blueberries around the dollop to create a red, white, and blue pattern.
- Refrigerate for at least 4 hours.
